Ingredients


     1 Rack of Baby Back Pork Ribs. Remove the membrane.

     Rub prepared using 1 Tbsp of Salt, Black Pepper, Garlic Powder, and Paprika

     1 Pound Russet Potatoes

     1 whole diced onion

     1 whole diced green bell pepper

     2 cans of beans

     1 cup barbeque sauce

Method


1.    Start with preparing the ribs, at least 6 hours before you want to cook it. Trim excess fat off the rack and season both sides evenly with the rub mentioned above.

2.    Set the pellet smoker temperature to 180 degrees Fahrenheit, and close the lid for fifteen minutes.

3.    Now, place the ribs on the grill and smoke for 5 hours. Use this time to prep your sides that make the meal complete.

4.    After the ribs are cooked all the way through at a lower temperature, you will have to brush both sides with a mixture of BBQ sauce and ketchup and finish it off at a higher heat to get a tantalizing caramelization.

5.    For prepping the potatoes, peel them off and soak them in a cold water bath so that the extra starch can come out.

6.    To prepare the beans, take a pan and saute the bell peppers and onion in it with some olive oil. Season the veggies with salt and pepper, once they turn translucent add empty the bean cans in and cook for a few minutes together to infuse the flavors.

7.    Once the beans are cooked with the veggies, lay the bean mixture in a casserole tray and cover with foil until you are ready to bake them when it is time to serve.
